In stable banked circular flight coffee does not spill (or even lean). Objects allowed to fall will fall toward the floor of the plane not downward toward the ground. A spirit level will continue to read "level" despite the bank. Good luck.

I marked the bottle with a pen when the plane was on level ground, and as it climbed of the runway the water rised above the mark (i had the table down, glad the stewardess didn't see this :) Plane flown in: Aerospatiale ATR-72
